Eden Mill

Type: Distillery and brand
A Scottish oak cask marked a new chapter for Eden Mill on 7 April 2025: the first cask filled at its new distillery beside the Eden Estuary.[13] This gin and single malt whisky producer stands in Guardbridge, Fife, near St Andrews. Its whisky story reaches back to the original operation in 2014, with the first single malts released in 2018.[1][5][9]

What Eden Mill is known for
A light, sweet new make with floral and grassy notes is the intended link between Eden Mill’s original operation and its new plant. Head distiller Scott Ferguson has described that as the aim for the new spirit, matching the character sought at the earlier distillery. These are his production goals, rather than tasting notes for every Eden Mill bottling.[13]
The scale has changed considerably. Eden Mill brings together a brewery founded in 2012, small-scale whisky distilling from 2014 and a much larger distillery that began production in 2025. Brewing remains part of the name’s history, though the producer now presents the business as a gin and whisky distillery.[1][5][13]
Cask selection gives the releases much of their individual identity. The producer’s account of the 2018 release lists ex-oloroso hogsheads, ex-bourbon barrels and ex-PX octaves. Distiller’s Cask Release #2, meanwhile, moved from Ruby Port to first-fill Tawny Port wood.[10][1] To understand an Eden Mill whisky, start with its distillation and cask history: the new building is a milestone, not the beginning of the spirit’s story.
Guardbridge, not St Andrews town
The former Guardbridge paper mill is Eden Mill’s setting, beside the Eden Estuary. “St Andrews” is central to the producer’s identity, but Guardbridge is the place to use on a map or when planning the journey.[1][5][6]
Guardbridge’s distilling history reaches back to 1810, when Scotchwhisky.com records a Haig family distillery there. It also reports that the University of St Andrews later bought the site with plans for a biomass facility to supply businesses there.[5] The Haig connection belongs to the history of the place; Eden Mill itself was founded in 2012.[3]
Documented: A Haig distillery operated at Guardbridge in 1810, with no business continuity with Eden Mill established in the record. The earliest source identified in the research sheet is the undated Scotchwhisky.com profile, checked November 2026.[5]
Documented: In The Courier’s account, a local staff member said they were the fourth generation of their family to work on the former paper mill site.[6] This is the staff member’s account, without independent verification of the family history. The research sheet identifies The Courier as its source, with no earlier source established. Checked November 2026.
From Eden Brewery to whisky distillery
Eden Brewery opened under Paul Miller in 2012. Trade reporting names Miller and Tony Kelly as Eden Mill’s co-founders; the distillery profile records gin and single malt distilling joining the operation in 2014, after an artisan still was installed.[3][5]
Three 1,000-litre Hoga alembic stills made up the original distilling equipment, as documented by WhiskySpeller in 2016.[7] Eden Mill described itself as Scotland’s first combined brewery and distillery. That remains the producer’s own claim, rather than an independently established first.[5]
The original premises were temporary. WhiskySpeller reported that the brewery knew this and had arranged the operation so it could relocate.[7] The later distillery brought a substantial change of scale, while the earlier account shows that moving was already a practical consideration.
The date of Inverleith LLP’s majority investment is disputed: The Herald reported the deal in January 2022, while Wikipedia gives 2021.[4][18] Neither report establishes the exact current legal owner.

The new Eden Mill distillery
The new distillery took shape on the University of St Andrews Eden Campus. Planning permission came in March 2022 and construction began in June 2023. The wash and spirit stills were installed in January 2025.[13][14] Eden Mill says LHS in Speyside manufactured the stills, designed with head distiller Scott Ferguson.[15]
On Monday 7 April 2025, the plant filled that first Scottish oak cask. Reporting at the time listed a mash tun, six washbacks, a gin still, wash and spirit stills, and a warehouse holding 300 casks.[13] Installed capacity was reported in 2025 as 1 million litres of pure alcohol a year. That is the plant’s production capability, not its actual annual output; the source record was checked in November 2026.[14][16]
In April 2025, reporting stated that the distillery’s electricity was 100% renewable, supplied by the university’s solar farm or through green tariffs.[16] The claim covers electricity supply, rather than the distillery’s entire environmental impact.
Disputed: Two opening markers appear in the record. Eden Mill’s page said “OPEN SEPTEMBER 2025”, while trade coverage reported the official opening of the distillery and visitor centre on 11 October 2025.[2][17] When each part first became accessible remains unclear. The producer’s wording has no established publication date; the trade report is from October 2025. Sources: Eden Mill and The Spirits Business, checked November 2026.

Whisky from the original operation
Eden Mill’s first single malts arrived in 2018, years before the new distillery began production.[9] The producer describes its 2018 Limited Release as 3,200 bottles at 46.5% ABV, bottled on St Andrews Day. It used Golden Promise and Propino barley, with the ex-oloroso hogsheads, ex-bourbon barrels and ex-PX octaves described above.[10][11]
Older spirit also marked the new distillery’s opening. The October 2025 opening release was an oloroso sherry single cask filled in 2016, yielding 279 bottles, according to trade reporting.[14][17] Its filling date places it well before production began in the new building.
In April 2025, coverage reported that just under 400 casks remained from the original distillery’s single malt production.[16] That stock figure belongs to that date, rather than serving as a current inventory. It explains how whisky from the earlier stills could accompany the arrival of the new plant.
The producer also describes Distiller’s Cask Release #2 as nine years old, matured first in Ruby Port and then first-fill Tawny Port, and bottled at 53.5% ABV in a release of around 300 bottles.[1] These are producer-supplied release details, not first-hand tasting observations; present availability is unconfirmed.
Visiting Eden Mill
Use Guardbridge as your destination, rather than St Andrews town. Start with the official distillery page, then check booking requirements, accessibility and age rules directly before travelling.[2][5]
The most useful distinction to carry into a visit is between the original operation and the new plant. Distilling began in 2014, older casks supplied subsequent releases, and the new distillery filled its first cask in April 2025.[5][13][16] Ask which operation produced the whisky being presented, then use that answer to frame questions about its equipment, intended spirit character and cask history.
