Kavalan

Type: Distillery and brand
Nine months to build a distillery; warm warehouses where the upper floors can reach about 42°C (108°F). Kavalan's story moves quickly from construction in 2005 to its first bottles in late 2008, bringing imported malt and equipment into the whisky landscape of Yilan County, northeast Taiwan.[1][5][6][7][8]
Kavalan is a Taiwanese single malt whisky distillery and brand, identified with King Car Group in a 2025 producer account. The exact legal owning entity and its effective date remain unconfirmed.[5]

What Kavalan is known for
Taiwanese maturation conditions give Kavalan its distinctive setting; a broad cask programme gives its whiskies room to differ. The Spirits Business describes the style as "fruity, oily and complex", a published description rather than a tasting conducted for this article. Bourbon, sherry, port, wine and brandy casks all feature in the published accounts, making the wood behind each expression a better starting point than expecting one flavour across the range.[1][3][6]
The name belongs to the place, not the founder. Kavalan takes its name from the Kavalan people who once lived in the area and from the old name of Yilan County. The distillery stands near Xueshan, also called Snow Mountain, about an hour from Taipei according to the published accounts.[1][7][9]
Story box
- Story title: A Yilan founder's distillery.
- The founder: Tien-Tsai (T. T.) Lee, King Car's founder and chairman, was born in Yilan. Published accounts describe building a distillery as his decades-old ambition, made possible after Taiwan's 2002 entry into the World Trade Organization opened production to private distilleries.[1][6][7]
- The build: Construction began in 2005 and took nine months. Trial distillation followed in early 2006, before the recorded first new make spirit on 11 March.[1][6][8]
- The adviser: Dr Jim Swan advised Kavalan for more than ten years. Accounts link his work particularly to American oak and the development of the distillery's cask treatment programme. He died in 2017.[1][6]
- The expansion: A second distillery was completed on the original site in 2016, expanding the production facilities.[1]

How Kavalan makes its spirit
Imported European two-row malted barley is Kavalan's starting point. Taipei Times identifies Scandinavia as the source and reports two kinds of dry yeast imported from France. Fermentation takes place in temperature-controlled stainless steel tanks. The production water is described as spring water from Snow Mountain and the Central Mountain Range.[3][7][8]
Copper follows stainless steel. Whisky Magazine describes double distillation, while published equipment accounts identify Scottish style copper pot stills made by Forsyths alongside Holstein stills. The equipment came from Scotland and Germany.[3][7][8]
The scale changed substantially with the second distillery. In its 2020 account, The Spirits Business reported four copper pot stills and installed capacity of 2.5 million litres of pure alcohol a year at the original distillery. After the second distillery's completion in 2016, it reported 16 additional stills and total capacity of 9 million litres of pure alcohol a year. The current still count and exact installed capacity remain unconfirmed.[1]
From there, the casks help distinguish one expression from another. Classic, Concertmaster and the Solist releases share a distillery, but their published descriptions set out different maturation or finishing choices. Those choices give a clearer picture of the range than the Kavalan name alone: look at how each whisky has been matured, then compare it with its neighbours.[1][6][8]
Heat, warehouses and wood
The warehouses are five storeys high, and casks are tied together as a precaution against earthquakes. The importer's account reports that upper warehouse floors can reach about 42°C (108°F). This is a temperature reported for the top of the warehouse, rather than a constant condition around every cask.[6][8]
Published profiles describe maturation mainly in the four to seven year range, with many expressions around four years old. The Spirits Business reported in 2020 that most Kavalan whiskies carried no age statement. These ages describe the whiskies covered in those accounts; they do not set an age specification for every later release.[1][3][6][7]
American oak was preferred on Swan's advice, but Kavalan's wood programme reaches well beyond one cask type. Its STR treatment uses wine barrels that have been shaved, toasted and re-charred. The Spirits Business credits Kavalan as the first distillery to use Swan's treatment, linking its development to a shortage of refill casks between 2009 and 2013.[1][6][7]
The terminology becomes easier to follow when each description is given its place. STR tells you how a barrel was prepared. Names such as port or Oloroso describe another part of its history. A barrel treatment, a previous cask use and a finishing step each tell a different part of the whisky's maturation story.[1][6][8]
Reading the Kavalan range
Begin with the expression name and its stated cask description. The selection below brings together names recorded in the published accounts; the list does not establish that every expression is currently released in every market.[1][5][6][8]
| Expression | Recorded detail | Source |
|---|---|---|
| Classic Single Malt | Kavalan's first whisky, released in late 2008. | [1][7] |
| Concertmaster | Port cask finish. | [6][8] |
| Distillery Select | Introduced in 2018. | [1] |
| Ex-Bourbon Oak | Bourbon cask expression. | [6][8] |
| Oloroso Sherry Oak | Sherry cask expression. | [6][8] |
| Solist | Single cask strength series, including Vinho Barrique, Amontillado Sherry, PX Sherry, Fino Sherry and Ex-Bourbon. | [5][6][8] |
Other recorded releases include King Car Conductor, Distillery Reserve Peated Malt and LÁN.[1][5][6]
There is also a gin. Launched in 2019, it uses the same malted barley spirit with kumquat, star fruit and red guava. It belongs alongside Kavalan's whisky story, but is not another single malt expression.[1]
Recognition beyond Taiwan
At the 2015 World Whiskies Awards, Solist Vinho Barrique was named World's Best Single Malt. In 2016, Solist Amontillado Sherry was named World's Best Single Cask Single Malt.[2][5][9]
A producer statement in 2025 reported that Solist Fino Sherry had been named Whisky of the Year at the International Whisky Competition. Separately, Whisky Magazine reported exports to around 60 countries.[5][7]
Two misconceptions to leave behind
Kavalan is not Taiwan's only whisky distillery. Whisky Magazine records that Taiwan Tobacco & Liquor began making Omar single malt at Nantou in 2013. Omar at Nantou has its own producer's story; Kavalan is one name within Taiwanese whisky, not a name for the whole category.[7]
Whisky sold in Taiwan also has a different history from whisky distilled there. Whisky Magazine traces Jade Supremacy to the 1980s, describing it as Scotch imported and blended in Taiwan. Keeping those activities distinct puts Kavalan's first spirit and first release in their proper context. Earlier whisky sales in a market do not, by themselves, mark the start of locally distilled malt.[7]
Planning a visit
Kavalan is part of Yilan County's visitor landscape as well as its whisky industry. Taiwan's Tourism Administration lists it as a tourism factory and reports more than ten million visitors. That is a cumulative tourism claim, not a visitor total for any particular year.[4]
Before travelling, check Kavalan's official visitor information directly for booking arrangements, accessibility and tour age rules. Check whether the experience you want includes a production visit or a tasting, rather than assuming that entry to a visitor attraction guarantees access to working production areas.
