The Moffat

Type: Distillery
Wood fires heat the stills at The Moffat, a family-run distillery in Dumfries and Galloway that began filling casks of its own malt spirit in 2024. Founded by Nick and Erin Bullard, it grew from Dark Sky Spirits, their bottling and blending business. The Moffat name was already on bottles before the stills began working: its sourced Moffat Blended Malt Scotch Whisky is a separate product, sold before distilling started on site.[4][6][7]

What The Moffat is known for
Direct wood firing gives The Moffat its distinctive production story. Heating stills this way is unusual in Scotch production, and the producer calls the site “Scotland’s first modern wood-fired distillery”. The equipment is documented in the supplied record; the claim to historical precedence remains the producer’s own.[1][6]
Here, “wood-fired” describes the heat beneath the stills, not a flavour in the glass. It tells us how the spirit is made, without establishing that the resulting whisky will taste smoky. The character of the mature whisky is a separate question from the fuel used to heat the equipment.
The Moffat made gin first, then filled its first whisky cask in 2024. Its own malt spirit cannot qualify as Scotch whisky before 2027: Scotch must mature in oak casks for at least three years. That is the earliest possible qualifying year, not an announced release date.[4][6][10]
From blending business to distillery
The Bullards’ route to distilling began with a move to Moffat in 2015. Nick and Erin established Dark Sky Spirits in 2017 as an independent bottling and blending business, then decided to start distilling in 2019. The business had a life, and sourced whisky, before it had spirit of its own.[4][6]
The producer places the hearth at the centre of the project, describing “a warm fire, food and drink made from the heart”. Its account joins the family’s move to Moffat with the creation of the distillery. This tells the story of the founders’ intentions; it is not evidence of a historical distilling tradition on this particular site.[2]
Dumfries and Galloway Council granted planning approval in January 2020, and ground breaking followed in 2021. Organic Architects designed the building to resemble the surrounding farm buildings. This was a new distillery taking shape, not an old whisky works returning to production.[5][6]
Story box: a distillery built around the hearth
| Field | Record |
|---|---|
| Founding story | The producer says Nick and Erin Bullard came to Moffat to raise their family and built the distillery around the hearth. Dark Sky Spirits began with bottling and blending in 2017.[2][6] |
| Turning point | The 2019 decision to distil took the business from sourcing and blending whisky towards a production site of its own.[6] |
| Documented record | The family and hearth story is classified as Documented in the supplied sheet; the account of personal motivation comes from the producer.[2] |

Production and the first cask
The first cask gives the distillery’s story a tangible focus. Through “ARISE: Wood Fire Revolution”, the producer follows that cask through maturation: spirit made at The Moffat, distinct from the sourced whisky already bearing its name. The project should not be read as a confirmed bottling schedule.[2]
The first cask’s filling date is Disputed. The supplied record gives March 2024, but a press report dated 5 April 2024 says it was filled “this month”. Spring 2024 is common ground; the month is not.[5][6]
That press account also records William Beishuizen’s help with the first fill. His contribution belongs to the start of production, a different milestone from the earlier public opening or the later point when the maturing spirit can legally become Scotch whisky.[5]
For the fires beneath the stills, the press account describes locally sourced firewood, calling those sources sustainable. Sustainability is the report’s description, rather than a separately verified environmental certification.[5][6]

Understanding the Moffat spirits
The Moffat name covers three distinct products in the record: sourced Moffat Blended Malt Scotch Whisky, unaged Moffat Moonshine and the distillery’s own maturing malt spirit. Each belongs to a different part of the business, from its established blending activity to its new production operation.[4][5][6]
Moffat Blended Malt has been sold since 2018, well before distilling began at the present site. Neither that date nor the name establishes that The Moffat was distilling whisky that year, or that the contents came from today’s distillery.[4][6]
Moffat Moonshine is the distillery’s unaged new make, according to the press account. “New make” means spirit before maturation. It is not Scotch whisky: the legal maturation requirement applies regardless of the name given to an unaged product.[5][10]
The producer describes tours ending with its blended malt Scotch, wood-fired gin and fruit whisky liqueurs. That selection reflects the wider spirits business, rather than a range of mature single malts distilled at The Moffat.[2]
Visiting the distillery
The Moffat opened to the public in July 2023, and the producer describes a tour and tasting. Those visits are documented, although current visitor arrangements remain unconfirmed.[2][4][6]
Before travelling, consult the official website for current booking arrangements, accessibility information and age restrictions. Confirm the meeting point and address directly, rather than relying on a directory description alone. The supplied address is Hearthlands, Old Carlisle Road, Moffat.[6]
A tour and a tasting need not be the same decision. Ask the venue about visiting without drinking, and arrange transport independently of any tasting plans; nobody needs to finish a sample.
Not the old Moffat complex at Airdrie
There are two separate distillery histories behind the Moffat name. The older one belongs to Airdrie in North Lanarkshire, where Inver House Distillers developed a distillery complex from 1964 on the site of the former Moffat Mills paper mill. The shared name does not establish a connection with the modern distillery in Dumfries and Galloway.[8][9]
The Airdrie complex housed Garnheath grain distillery and the Glen Flagler and Killyloch malt distilleries. Glen Flagler stopped production in 1985; Garnheath closed in 1986. These are milestones in the Airdrie story, not in the history of the Bullards’ distillery.[8][9]
Place and date are the quickest way to distinguish the two when researching a bottle or historical reference. The old Inver House complex means Airdrie. The family project covered here opened to the public in 2023.[6][8][9]
