Type: Distillery

On 21 March 2017, the first spirit went into cask at Nc'nean, a new distillery overlooking the Sound of Mull.[2][4] Founded by Annabel Thomas at Drimnin on Scotland’s Morvern peninsula, it makes unpeated single malt Scotch whisky from organic Scottish malt. The estate describes the spirit as “fruity and elegant”: a west coast whisky without peat smoke at its heart.[1][3][4]

What Nc'nean is known for

Organic malt, experimental yeasts and renewable energy shape Nc'nean’s approach. Its flagship Organic Single Malt brings together whisky matured in red wine, bourbon and Sherry casks. The Huntress series gives individual experiments releases of their own.[1][2][4]

“Unpeated, fruity and elegant” is the estate’s description of the intended house character, rather than a tasting verdict on every bottle.[3] A west coast address need not mean smoky whisky: Nc'nean uses unpeated malt.[2][3]

The people making and bottling the spirit have a place in the range, too. Quiet Rebels releases take staff members’ names, with Simon associated with a stout-cask finish.[1][4] The range extends beyond variations on the flagship single malt.

From estate project to first spirit

Nc'nean was built afresh at Drimnin Estate, not revived from an old estate distillery. Derek and Louise Lewis bought the estate in 2002. Their daughter Annabel Thomas, having left her work as a strategy consultant in London, began planning a single malt distillery there in 2012.[2][5][7]

Establishing the business also meant confronting assumptions about who belonged in whisky. Thomas told Sky News that people asked her “basically every single day” whether she actually liked whisky, adding that nobody would ask a man that. The report describes a female-led team and quotes her saying that none of the distillers had previously worked in whisky.[5]

The name and its story

The producer says Nc'nean is short for Neachneohain, a huntress in Gaelic legend associated with protecting nature. The distillery calls her its “guiding star”.[1][3] This documents the name’s inspiration, while the figure herself belongs to legend rather than established history.

How Nc'nean makes its spirit

Long fermentations and an adventurous choice of yeasts are central to the production story. Trade accounts give overlapping fermentation ranges of 66 to 114 hours and 65 to 120 hours, rather than one fixed duration for every batch.[2][7] Yeast choices include strains not usually used by distillers.[1][2]

The starting material is organic, Scottish, unpeated malt. A semi-lauter mash tun takes one tonne of grist, or milled malt. Fermentation follows in four stainless-steel washbacks.[1][2][7]

Stage Published account
Mashing Semi-lauter mash tun; one-tonne grist charge.[2]
Fermentation Four stainless-steel washbacks; long fermentations and varying yeast strains.[2][7]
Distillation Two lantern-shaped stills: one wash still and one spirit still.[2][7]
Heating Steam from a biomass boiler burning wood chips from a local forest.[2]
Warehousing On-site dunnage warehouses with temperature controls.[2][7]

Huntress gives these experiments a public face. The series includes Orchard Cobbler and Lemon Meadow, the latter made using a Champagne yeast.[1][4] That production difference is documented, though its contribution to the finished whisky’s flavour cannot be separated from maturation on this evidence alone.

Casks and the range

Red wine and ex-bourbon casks lead Nc'nean’s maturation programme, with a smaller Sherry contribution.[2] Berry Bros. & Rudd gives the flagship Organic Single Malt’s composition as 55% ex-red wine casks, 43% ex-bourbon casks and 2% ex-Sherry casks.[4] This is the published flagship recipe, not a formula for every Nc'nean release.

The producer’s range includes Organic Single Malt, Cask Strength Organic Single Malt and Organic Botanical Spirit.[1] Botanical Spirit stands apart from the whisky. It combines unaged malt spirit with juniper, grapefruit and foraged bog myrtle, thyme and heather.[4] The producer calls it “gin-like”, rather than simply calling it gin.[1][7]

Among the staff-named Quiet Rebels releases, Sarah, who has run the bottling line, lends her name to an oat milk whisky liqueur released in November 2025.[4]

The early casks now offer a direct connection with the first day of filling. Cask number 7, filled on that day, was opened at a Berry Bros. & Rudd tasting in March 2026.[4] The published account records that individual cask event rather than supplying tasting notes for this article.

Energy, water and materials

A biomass boiler, fuelled by wood chips from a local forest, supplies steam for distillation.[2] This is the equipment behind the producer’s and estate’s statement that the stills run on 100% renewable energy.[1][3]

Water is reused, too. Berry Bros. & Rudd describes hot water being cooled in a lined pond, using rainfall, before returning to use.[4] Production by-products go back to the Drimnin farm as animal feed or fertiliser, according to the estate.[3]

Nc'nean states that its bottles use 100% recycled glass and that it is B Corp certified, with verified net zero carbon emissions for scopes 1 and 2.[1][3] The emissions claim is limited to those scopes, rather than establishing net zero across every activity connected with making, transporting or consuming the products.

Visiting and reading the range

Tours, a shop and a bar with a refill station feature in estate and trade accounts.[3][4] Before travelling, consult the official website for booking arrangements, accessibility and tour age rules; the postal address is Drimnin House, Drimnin Estate, by Lochaline, Morvern, Argyll, PA80 5XZ.[3]

Read the range by product, not simply by distillery name. For the flagship single malt and experimental Huntress whiskies, look at the documented maturation and production choices. For Botanical Spirit, the distinction starts earlier: unaged malt spirit and botanicals, rather than whisky matured in cask. Staff-linked Quiet Rebels products also need individual attention, particularly the oat milk whisky liqueur. Ingredients and maturation tell more than assumptions drawn from the coastal setting.[1][3][4]
